What Is Douchi? A Brief History
Douchi (豆豉, pronounced approximately "doh-chir") are black soybeans that have been cooked, inoculated with mold cultures, and fermented — then heavily salted and aged. The result is a small, dark, intensely savory ingredient that has been foundational to Chinese cooking for over two millennia.
The earliest written reference appears in Chinese medical texts dating to roughly 200 BCE. The Shen Nong Ben Cao Jing (神农本草经), an ancient Chinese pharmacopoeia, documents douchi as both a food and medicinal ingredient. Cooked black soybeans are spread out and inoculated — either deliberately with Aspergillus oryzae (the same koji mold used in miso, sake, and soy sauce) or with naturally occurring Mucor species or Aspergillus niger, depending on the producer. The soybeans are held at warm temperatures (28–35°C) for 24–72 hours. During this time:
- Proteases (enzymes from the mold) break down soy proteins into free amino acids, particularly glutamic acid — the same amino acid responsible for the umami taste in MSG, Parmesan, anchovies, and miso
- Amylases break down starch into sugars, which contribute sweetness and serve as substrate for subsequent microbial activity
- Lipases break down fats into fatty acids, contributing to the earthy, funky aroma
Stage 2: Salt-Curing and Aging
After the initial mold fermentation, the soybeans are mixed with significant amounts of salt (10–18% of total weight) — sometimes with ginger, chili, orange peel, or Shaoxing wine — and packed into ceramic jars or vessels for aging. During the aging phase (1 to 6 months), bacterial fermentation continues slowly under the salt's control. The flavor intensifies, mellows, and integrates. The salt simultaneously preserves the product and slows fermentation to a pace that develops complexity rather than spoilage.

Douchi vs. Black Bean Sauce: What's the Difference?
This is the most common point of confusion for Western cooks encountering Chinese black bean recipes.
Whole Douchi (干豆豉)
The raw ingredient. Whole or partially crushed fermented black soybeans. High salt content. Requires chopping or mashing and cooking in oil before adding other ingredients. Delivers maximum fermented depth and allows you to control the level of garlic, ginger, and other aromatics yourself. Used by most restaurant cooks and home cooks in Chinese households. Lee Kum Kee Black Bean Garlic Sauce (蒜蓉豆豉醬)

The trade-off: less control, slightly less fermented complexity, and you can't taste the individual whole beans in the dish. For weeknight cooking, the Lee Kum Kee sauce is a respectable shortcut. The canonical Cantonese preparation. A whole fish (or fillets) is seasoned, topped with chopped douchi, sliced ginger, and scallion, then steamed 8–10 minutes.
