A gas burner makes a flame; the flame heats the pan, and most of its heat goes around the pan into the kitchen. An induction hob creates an oscillating magnetic field that induces electrical currents in the base of a ferrous pan, and the pan heats itself. The hob surface stays relatively cool, almost all the energy ends up in the food, and the response to turning the dial is effectively instant in both directions.

That is the whole technology, and the practical consequences follow from it. Induction is faster, more precise at low heat, cooler in the kitchen, easier to clean and cleaner to breathe next to. Gas gives visual feedback, works with any pan, handles a round-bottomed wok, and keeps working in a power cut. Which set of advantages matters more depends on what and how you cook.

The Cookware Question Is Smaller Than It Looks

Induction needs a pan with a magnetic base: cast iron, carbon steel, enameled iron, and any stainless steel pan with a magnetic base layer, which is most of them. What fails is bare aluminium, copper without a steel plate, glass and most ceramic. The test is a fridge magnet: if it sticks firmly to the pan base, the pan works.
