Walk into any bakery and the word "sourdough" is everywhere. But most of what's sold under that name shares nothing biochemically with the real thing. A real sourdough starter is different. Over 24โ72 hours of culture maintenance, wild yeasts (Kazachstania humilis, formerly Candida humilis) and LAB strains establish a metabolic partnership. The LAB produce lactic and acetic acids that lower the dough's pH to around 3.8โ4.2. This acidic environment activates endogenous wheat enzymes โ proteases and phytases โ that the bread's own grain contains but never otherwise gets a chance to deploy.

The LAB in sourdough are the functional workhorses. This is the single most important consumer point in this article: the majority of bread labeled "sourdough" at supermarkets contains no living ferment and undergoes no meaningful fermentation period.
The FDA does not regulate the term "sourdough." Commercially, most sliced "sourdough" bread is made with:

None of the FODMAP reduction, gluten pre-digestion, phytate breakdown, or mineral availability improvements apply to these products. They are regular bread wearing a sourdough costume.
