The LAB produce lactic and acetic acids that lower the dough's pH to around 3.8โ€“4.2. This acidic environment activates endogenous wheat enzymes โ€” proteases and phytases โ€” that the bread's own grain contains but never otherwise gets a chance to deploy.

The Role of Lactic Acid Bacteria

The LAB in sourdough are the functional workhorses. Key species include Lactobacillus sanfranciscensis (now reclassified as Fructilactobacillus sanfranciscensis), Leuconostoc mesenteroides, and dozens of other heterofermentative strains depending on your flour and geography. These bacteria do not merely produce sourness โ€” they secrete proteases that begin hydrolyzing gluten proteins, they produce exopolysaccharides with prebiotic properties, and they compete aggressively with pathogens via bacteriocin secretion.

The specific ratio of acetic to lactic acid also determines flavor profile. A cool, stiff dough (low hydration, 50โ€“60ยฐF) favors acetic acid โ€” sharp, tangy. A warm, wet dough (80ยฐF+) shifts toward lactic acid โ€” mild, yogurt-like. Neither is "better"; they're different tools.

How Long Fermentation Pre-Digests Gluten and Phytates

Gluten is a network of gliadin and glutenin proteins.
