A stand mixer is a slow, powerful motor turning a tool through a bowl in a planetary orbit. It is built to develop gluten in bread dough over ten minutes, and to incorporate air into eggs and cream over five. Everything else it does is a bonus. A food processor is a fast motor spinning a blade in a sealed work bowl. It is built to cut things — chop, slice, grate, purée, and cut fat into flour — in seconds. Everything else it does is a compromise.

Most of the confusion comes from the overlap: both can make pastry, both can make certain doughs, and both cost enough that people want the one purchase to cover everything. It does not. The honest way to choose is to list what you cook and see which machine's core job appears more often.

What Only a Stand Mixer Does Well

Bread dough, kneaded to full gluten development, in a large batch. A food processor can bring a small dough together in a minute and does it surprisingly well, but it heats the dough through friction, struggles above about 500 g of flour, and cannot run for the eight to twelve minutes that a wet, high-hydration dough or a large loaf needs. What Only a Food Processor Does Well

Chopping and slicing in volume. Onions for a large batch, a kilogram of cabbage for sauerkraut, carrots for a mirepoix, a block of cheese grated in eight seconds. Purées: hummus, pesto, nut butters, smooth soups. Cutting cold butter into flour for shortcrust, pie dough and scones — the processor does this better than any other method, including by hand, because it works fast enough that the butter stays cold. A stand mixer does none of these. The slicer and grater attachments sold for mixers are slower, fiddlier and less capable than a mid-range processor's included discs, and cost nearly as much as one.

Read the table against your own cooking. A household that bakes bread weekly and makes a cake a month has a mixer household. A household that cooks from vegetables every night, makes its own hummus and rarely bakes has a processor household. A household that does both and can afford only one should buy the machine whose core job it does more often, and a hand mixer or a knife to cover the gap.

Motor Numbers That Mean Something

For a mixer, wattage is a poor guide because it measures draw rather than delivered torque; the useful proxy is bowl-lift versus tilt-head design and the maximum flour capacity the manufacturer states for bread. Tilt-head models at 4.5–5 litres handle most home baking; bowl-lift models at 6–7 litres are for people kneading large or stiff doughs regularly.
