Cover and cook. Never flip. Immediately cover with a lid. Cook 2–3 minutes until: the entire surface is matte (no wet-looking spots), the "eyes" are fully formed across the surface, and the edges lift slightly from the pan. Do not flip. Do not press. The top is steamed by trapped moisture; the bottom is cooked by the pan; both are correct.
